Apple Cake with Fresh Cherries

Today I made one easy and delicious apple cake with fresh cherries. I saw the cherries at the store and thought that I have to make something out of them, they looked so delicious and fresh!

 I made three recipes out of these cherries and here is the first one. 

I decided not to put the apples and cherries inside, so my cake would stay soft and wouldn’t get very moist. I added chocolate chips and decorated it with apples and cherries. I used 1 ½ apples, the number of apples really depends on the size of the apples you’re using, and I used around 20 cherries.

Wash the cherries and remove their pits. Here I’ll show you how to do it . If you don’t have a cherry pitter, you can use a paperclip. It works perfectly.

I decorated the cake with powdered sugar and served it with a ball of cherry ice cream. My daughters loved it!

This cake is definitely for cherry lovers and it’s perfect to serve at a get together with friends during the summer!

Ingredients

  • 100 g unsalted butter, softened
  • 120 g sugar
  • 1 tsp vanilla extract
  • 3 eggs
  • 230 g flour
  • 1 tbsp baking powder
  • ½ tsp salt
  • 2 tbsp lemon juice
  • 2 tbsp lemon zest
  • ¼ cup chocolate chips
  • 2 apples
  • 20 cherries

Instructions

  • Preheat the oven to 350°F.
  • In a medium bowl, beat the butter with the sugar. Add the vanilla extract and start adding the eggs one by one. After that, add the sifted flour, baking powder and salt and mix. Add the lemon juice and lemon zest. Mix it all well and set aside.
  • Wash, cut in half and core the apples. Slice the apples in pieces that are about ⅛ inch (3 mm) thick. Set aside.
  • Wash the cherries and remove the pits. As I said, I will show you how to pit your cherries with a paperclip if you don’t have a cherry pitter. 🙂
  • Add the chocolate chips to the dough and mix.
  • Grease and line with parchment paper a cake 26 cm diameter pan (10 inch).
  • Pour the dough on the prepared cake pan and start arranging the apple slices in rows. After that, decorate with the cherries.
  • Bake the cake in a preheated oven at 350°F for about 30-35 min.
  • Once it’s baked, let it cool down and decorate it with powdered sugar and ice cream.
