No-bake cheesecake in a cup is such an easy and fast dessert, I can’t tell you enough about how obsessed I am with it currently.

I love cheesecake but I decided this time to make it differently. I tried to put it in cups so it will be easy and pleasant for everyone to eat. I also didn’t put any butter in the biscuits. I simply blended them and put them at the bottom of the cups and topped them off with the cream.

I blended the blueberry jam and then strained it to remove the skins and seeds as I wanted the cream to be smooth. It had such a wonderful taste. If you want to have pieces of blueberries in the cream, you can skip this step.

Ingredients

  • 1½ cups blueberries
  • ½ cup sugar
  • ¼ tsp salt
  • 2 tbsp lemon juice
  • 120 g biscuits
  • 250 g cream cheese
  • 1 cup sour cream ( 14 % )
  • 1 tsp vanilla extract
  • 1 cup whipping cream

Instructions

  • In a medium saucepan, put the blueberries, sugar, salt and lemon juice. Boil the mixture on the stove for 10 min, until it begins to thicken. Take it off the heat, strain and blend it. Set it aside.
  • Blend the biscuits and set them aside.
  • Take the now cooled blueberries and blend them well. Strain the blended mixture and set it aside once again.
  • In a medium bowl, mix the cream cheese and sour cream together with the hand mixer. Add in the vanilla extract and the blueberry mixture.
  • After that, add the whipping cream and mix well. Fill a pastry bag with the mixture and set it aside.
  • Prepare the cups. Put in the bottom the blended biscuits and level them with another smaller cup.
  • Put the blueberry mixture on top of the biscuits. Cover the cream with blended biscuits and level them once again.
  • Garnish the top with blueberries.
