Chocolatine // Pain au chocolat

Today I’m offering you something very tasty and easy to prepare: chocolatine or also known as pain au chocolat. It is prepared only from puff pastry, chocolate and an egg.

As you will see below in my recipe, I brush them with an egg, and after they are baked, I brush them with a little sweet syrup and garnish them with melted chocolate.

You will say that I complicated the recipe. Well maybe you will be right, because the chocolatines without anything on top are also very tasty. But trust me, try drizzling some melted chocolate and sweet syrup on top, it really is a game changer.

The puff pastry has no sugar, so the sweetness comes only from the chocolate. For this, if you spread some sweet syrup over the chocolatines, you will get so much more sweetness as well as a wonderful, shiny look. I strongly recommend you not to skip this step.

The chocolate on top of these sweets also gives a little more sweetness and chocolate flavor, for those who have that extra sweet tooth 😉 .

Lately I’ve been using a different type of puff pastry and the results have been mixed.This time I bought a different type of puff pastry. Usually I go to my favorite store where I find the best puff pastry. However, I didn’t have time to go to this store and so I bought the puff pastry from the one near my house. My chocolatines didn’t have many layers, but they were still very delicious.

On this note, I want to draw your attention to the fact that if you ever don’t get exactly the same result as the one in the picture of the recipe you are following, it is very likely because of the type of puff pastry. I’ve tried using different types of puff pastry and the results all come out different. My biggest tip for you here, is to try different puff pastries and see which one works the best for you. That is what I did. 

Chocolatine // Pain au chocolat

Ingredients  

  • 425 g puff pastry
  • 100 g chocolate chips
  • egg yolk
  • 1 tsp milk
  • 20-30 ml simple syrup (here is the recipe)
  • 20-30 g chocolate chips, melted

Instructions 

  • Firstly, thaw the puff pastry at room temperature. Don’t let it get too warm, or it will be too floppy and sticky and it will be hard to work with.
  • Preheat the oven to 400°F.
  • Line a large baking sheet with parchment paper.
  • When the puff pastry has softened, unroll it and, using a pizza cutter, cut the dough in 10 equal rectangles.
  • Place the chocolate chips on the bottom short side of the rectangle as well as on the top short side of the rectangle.
  • Using a knife, cut 3 lines in the middle of the rectangle.
  • Starting at the bottom short side, roll dough over the first line. Then take the top short side and roll it over the third line. Turn the chocolatines over and place them on the baking sheet.
  • Mix the egg yolk and milk together and brush the mixture over the chocolatines.
  • Bake them in a preheated oven for about 15-20 minutes.
  • Let them cool on a wire rack.
  • Brush them with simple syrup and then decorate them to your taste with the melted chocolate.
