Delicious Pumpkin Pie

This pumpkin pie is a little different from the ordinary ones. Its loaf is pre-baked and has a little coconut and almond flavour which mixed together with the pumpkin give an incredible taste.

Try something different and at the same time so familiar in taste.

Ingredients

Crust

  • 220 g flour
  • 60 g powdered sugar
  • 40 g unsweetened finely shredded coconut
  • 100 g almond flour
  • 2-3 pinches salt
  • 125 g soft butter
  • 1 tbsp vanilla extract
  • 1 egg

Filling

  • 400 g pumpkin puree ( the recipe is here )
  • 1 (300 ml) can sweetened condensed milk
  • 1 tsp ground cinnamon
  • ½ tsp ground nutmeg
  • ½ tsp salt
  • ⅛ tsp ground cloves

Decoration

  • 200 ml whipping cream
  • 2 tbsp powdered sugar

Instructions

Crust

  • Preheat the oven to 360° F.
  • In a food processor, process flour, powdered sugar, shredded coconut, salt and almond flour.
  • Then add cubed butter and pulse until crumbs are formed.
  • Add vanilla extract and egg, process until dough is formed. Do not over mix.
  • Transfer the dough to a 9-inch (23cm) pie pan. Using your fingers evenly press the dough into the bottom and up the sides of the plate. Trim off the excess dough off the top of the pan. Prick the dough with a fork.
  • Bake about 20-25 min.
  • Preheat oven to 350°F.

Filling

  • Place all of the ingredients for the filling in a large bowl and whisk until smooth and evenly combined.
  • Pour into the baked crust.
  • Bake about 50-60 min.
  • Remove from the oven and let cool completely before serving.

Decoration

  • Mix in a bowl the whipping cream and the powdered sugar with a mixer to make whipped cream.
  • Decorate the pie with it.
