I think apples are such a staple in bakery and sweets. They are not too sweet nor too tangy, they are just perfect for a sweet and fresh dessert to help finish off any meal. Also, they are pretty easy to find at any time of the year as there are always apples in the grocery stores. Of course, the best season to get them, undeniably, is during fall, the apple picking season. It’s when the apples are sweet and crunchy, just perfect.

My idea with these apple rings was to make something quick, easy and simple yet something that looks like it’s a complicated and intricate dessert. The apple gives so much freshness to the dessert that it feels so light while still being very sweet.

This recipe really doesn’t require many ingredients and time, however it might require quick hand work. You’ll see it is basically apple circles coated in cinnamon and brown sugar wrapped with puff pastry. The wrapping can be the tricky part as the apple tends to release juices and it softens the puff pastry a lot, it turns it into an elastic. But don’t worry if you find it hard to wrap a long strip around the apple, I got you. I will show you another way you can do it, that can maybe be easier for you. You’ll simply need to use shorter stips and wrap more strips around the apple.

Also, in this recipe, I brush the apple circles with an egg yolk and sprinkle them with sugar.

Another option is to brush them with egg yolk and after they are baked and cooled down, brush them with simple syrup. If you want to try using simple syrup here is my recipe for it.

Easy Apple Ring Puff Pastry

Ingredients  

  • apple
  • 225 g puff pastry
  • 2-3 tbsp brown sugar
  • egg yolk
  • 1 tsp milk
  • ground cinnamon
  • white sugar or simple syrup

Instructions 

  • Preheat the oven to 400F.
  • Cut the apple into circles and core them.
  • Lay out the puff pastry and cut it into strips about 1.5 cm wide, cutting along the shorter side of the puff pastry.
  • Dip each apple circle into the brown sugar making sure it’s well coated on both sides. Then sprinkle only on one side with the ground cinnamon.
  • Take one long puff pastry strip and wrap it around the apple and through the center hole. Take note that the apple releases quite a bit of juices and it can really soften the puff pastry.
  • Therefore, if you’re having a hard time wrapping the long strip around the apple, you can cut it in half, sprinkle it with a little flour and wrap each half, just like shown below. 

Cut it in half and sprinkle it with a little flour. (optinal)

  • Once all the apple circles are wrapped, mix the egg yolk and milk together and brush the mixture over them. 
  • Sprinkle them with the white sugar.
  • Bake in a preheated oven for about 18-20 minutes.
  • Let cool down on a wire wrack and you can then sprinkle them with powdered sugar and serve.
