This delicious brioche bread is so fluffy, it practically melts in your mouth. It is an absolute treat with a sweet flavor and a beautiful soft texture. In Eastern Europe, it is traditionally prepared for Easter, but it’s also great for breakfast or for an afternoon snack. It is wonderful, smells amazing and brings a sense of pleasure and beauty. It can be tangled in different ways. I have shown the traditional one in my video, but you can do it as you see fit.

I added Turkish delight to it, which gives it an exceptional sweetness and taste. If you do not like it, replace it with raisins that are pre-soaked or put in a mixture of cocoa and sugar. You can improvise with the filling depending on your taste and preferences.

Easy Fluffy Brioche Bread

Ingredients

  • 1 egg yolk
  • 1 egg
  • 60 g sugar
  • 8 g dry yeast
  • 250 ml warm milk
  • 1 tsp salt
  • 400 g flour plus 10-15 g for kneading
  • 50 g butter, room temperature
  • 1 tbsp lemon peel
  • 1 tbsp oil
  • Turkish delight

For spreading

  • 1 egg yolk
  • 1 tsp milk

For sprinkling

  • sugar
  • almond flakes

Instructions

  • In a medium bowl, pour the milk, yolk, egg, sugar, salt, dry yeast and stir. Cover with a towel and leave for 15-20 minutes.
  • Afterwards, add the grated lemon peel and flour to the foamy mixture and stir it. Start adding a little of the butter, kneading with your hands. With each new piece of butter added you will notice how the dough changes and becomes a little more elastic. After adding the whole amount of butter, take out the dough and start kneading it on a floured surface. The idea here is to knead it until it stops sticking to your hands. Be careful not to add more flour than necessary. I kneaded it for about 7-8 minutes, adding a little bit of flour. When it is ready, transfer it to a bowl greased with 1 tbsp oil. Grease the ball of dough with oil, cover with foil and a towel and let it double in size, which happens for about 2 hours.
  • Then gently press it to remove the air from the dough and take it out of the bowl. Divide the dough into three balls. With a little flour and using only your hands, make long rectangles out of the balls. In these rectangles you will put the stuffing of your choice. I put 3-4 pieces of Turkish delight which I cut lengthwise. Roll the rectangles from their long side. Pinch the ends and twist into a roll.
  • After making all three rolls, gather their upper ends and start knitting into a braid. Fold both ends inwards and place the kneaded bread in a prepared pan covered with baking paper. Cover with a towel and leave to rise again for about 40-45 minutes. If you do not have this time, you can put it in the oven, which is set at the lowest temperatures for about 15-20 minutes.
  • Once the bread has risen, spread the yolk over it, which is previously beaten with a teaspoon of milk. Sprinkle with sugar and nuts to taste. Bake in a preheated oven at 350 F for about 40-45 minutes. Because each oven is different, if after 20 minutes you notice that the bread is well baked on top, put aluminum foil on it so that it does not burn.
  • After removing it from the oven, cover it on top with kitchen paper and a towel and let it rest for 15-20 minutes. Then take it out on the rack and cover it again, for about 30 minutes.
