Easy Red Velvet Cheesecake

Red Velvet is one of the most delicious and beautiful cakes out there, at least in my opinion. Today I will show you a much lighter version of it. The cake has only 2 layers and it isn’t very sweet. I reduced the sugar in the layers and there isn’t any sugar in the cream. Instead of sugar, I added white chocolate to give the cream some sweetness. The cake is easy to prepare and no decorating skills are requared.

This is a cake that you can prepare for any occasion. It would be perfect for Christmas and Valentine’s Day, but also for any of your guests to make them feel special.

Easy Red Velvet Cheesecake

Ingredients

Cake Layers

  • 125 g flour
  • ½ tsp salt
  • ½ tsp baking soda
  • 1 tsp baking powder
  • ½ tbsp cocoa powder
  • 50 g unsalted butter, room temperature
  • 100 g sugar
  • 1 tsp vanilla extract
  • 80 g vegetable oil
  • ½ cup butter milk
  • 1 egg
  • ½ tsp white vinegar
  • 1 tsp red food coloring

Cream filling

  • 150 g white chocolate
  • 50 g unsalted butter
  • 50 ml whipping cream
  • 1 tsp vanilla powder
  • 1 cup ( 250 ml) whipping cream
  • 500 g cream cheese

Decoration

  • 150 ml whipping cream
  • 1 tbsp powdered sugar
  • red food coloring

Instructions

Cake Layers

  • In a large bowl, sift together the flour, salt, baking soda, baking powder and cocoa powder. Set aside.
  • In a small bowl, mix together the vinegar and red food coloring. Set it aside.
  • In another large bowl, whisk together the butter and sugar, add the vanilla extract, vegetable oil, buttermilk and the egg and mix well. Lastly, add the colored mixture.
  • Mix the dry ingredients into the wet ingredients until they are well combined and a smooth batter is formed. You are ready to bake.
  • Grease and line with parchment paper 2 cake pans (8″/20 cm).
  • Divide the cake batter evenly among the prepared 2 cake pans. Bake at 350 F for about 12 minutes.
  • Remove the cakes from the oven and let them cool for about 10 minutes.  
  • One at a time invert them onto a cooling rack. Let them cool completely.

Cream cheese filling

  • Fill the saucepan with a small amount of water and bring to the boil.
  • Put the pieces of white chocolate, butter and whipping cream into a heatproof bowl and put it on top of the saucepan, making sure the base of the bowl doesn’t touch the water. Turn the heat down and let the white chocolate melt very gently, giving it a careful stir every now and then. Remove the bowl and let it sit somewhere until the chocolate cools to room temperature but still remains liquid.
  • In a small bowl, beat the whipping cream.
  • In another bowl, with a handheld mixer, beat the cream cheese until smooth. Add melted cooled white chocolate and the vanilla powder and mix until fully combined. Finally, add the whipping cream and mix carefully with a spatula.

Assemble the cake

  • Pour  ⅔ of the cream on the first layer of the cake. Cover it with the second layer of cake and put on top the remaining cream. Leave in the fridge for 3 hours.

Decoration

  • In a small bowl beat the whipping cream with the powdered sugar. Decorate the cake as you desire.
