To me appetizers are like the preview of the meal we present to our guest. This is why I love making appetizers so much, they are like a little sneak-peak of what is coming up next. Therefore, I always try to vary them. This is why I prepared these eggplant rolls with cream. cheese.

Eggplant Rolls with Cream Cheese

Whether it’s during the holidays or for a simple get together, these eggplant rolls are the perfect thing to make. I have made other recipes with eggplants before as you’ll be able to see below. I think eggplants are a wonderful ingredient, they are so rich in both taste and texture. Of course, they can be a little tricky to make as they can be a little tangy if you don’t prepare them well. I think this is the reason a lot of people can stray aways from cooking them. But don’t you worry, I have the perfect and easy way of preparing eggplants for any dish that will prevent that tangy taste and that will help you elevate your dishes by so much 😉 .

My secret is, as I call it, the salting process. Let me teach you a little bit about the salting process. It consists of sprinkling evenly with salt each side of the eggplant slices, then setting them aside for 30 minutes to drain. This will draw out the bitter juices of the eggplant. Afterwards, we carefully rinse each piece of eggplant under cold water, making sure we remove all the salt and then we drain the slices well and pat them dry with a paper towel.

Now many can ask themselves: Is this salting process necessary? Are eggplants really that bitter? Can I skip the salting process?

Well the answer to those questions is yes and no… let me explain it to you.  Well, first of all let’s see what is the point of this whole salting process. In fact, the salt helps cover up the bitterness that the eggplant might have and it also draws out some of the moisture which helps the eggplants have a stronger flavor and softer texture. However, nowadays farmers have innovated their ways of cultivating eggplants which ensures that naturally the eggplants are not bitter. This means that the salting step can be skipped if you buy fresh eggplants from a farm or even most grocery stores. I decided to salt my eggplant slices as I used a home grown eggplant, therefore it was a little bit bitter and it needed that salt to help manage its taste.

Eggplant Rolls with Cream Cheese

Ingredients  

  • eggplants
  • salt
  • olive oil
  • 250 g cream cheese
  • 2 tbsp sour cream
  • garlic clove
  • salt
  • parsley
  • tomato
  • olive oil

Instructions

  • Firstly, slice the eggplants into thin slices. Sprinkle evenly with salt on each side of the slices. Set aside for 30 minutes to drain. This draws out the bitter juices of the eggplant.
  • Then, carefully rinse each piece of eggplant under cold water, making sure you remove all the salt. Drain well.
  • Transfer the rinsed eggplant pieces to a clean work surface or arrange them on a large baking sheet in a single layer and pat dry with a paper towel. After that, drizzle them with olive oil on both sides of the slices.
  • Grill on the barbecue or roast them in the oven. If you decide to use the oven, preheat it to 400 F and roast them for about 30-35 min.
  • Preheat the oven to 400 F.
  • In a medium bowl, combine the cream cheese with the sour cream. Add the mashed garlic as well as the chopped parsley. Mix and add salt to taste.
  • Then, slice the tomato into thin slices.
  • Take a slice of  the roasted eggplants and place it on your work surface. Take about a spoonful of the cream cheese mixture and place it at the beginning of the narrow part of the eggplant slice.
  • Roll the slice and put it in the pre-greased pan with olive oil. Place the tomato slices on top of the rolls.
  • Finally, bake them for about 20 min.
  • Before serving, garnish them with basil pesto.
