Fried eggs are an amazing option whether it’s for breakfast or for dinner. They are super fast and easy to make and they always turn out to be super delicious.

In my childhood, my grandmother used to make me fried eggs with the eggs from our hens. Can you imagine the qualities of these eggs!? They were so rich and delicious, honestly quite different from the store bought ones. I miss those days when we had hens that would give us eggs that sometimes had 2 yolks.

Of course, store bought eggs are still good and they are definitely cheaper than if you buy them from a farm nowadays. But if you have the chance, I recommend you try getting eggs from a farm near you, if there is one.

Today, I fried these eggs with butter and I wanted the yolk to be runny because my family likes that. However, if you don’t like your yolks runny, just fry them for a little longer. The important part of my recipe are the tomatoes. I fried the garlic first and after that added the cherry tomatoes. I seasoned them with salt and black pepper and fried them for 4 to 5 min. Before you take them off the stove, add some paprika, mix it all one last time and then take them off the heat. Pour them over the eggs. Finish it off by sprinkling them with feta and parsley. If you haven’t tried fried eggs with feta, I strongly recommend you do. It’s so delicious.

Ingredients

  • 1 tbsp butter
  • 2 eggs
  • 1 tbsp butter

  • 5 to 6 cherry tomatoes

  • salt
  • black pepper
  • 1/2 tsp paprika
  • feta cheese
  • parsley

Instructions

  • Put the butter in a large pan over medium heat. Put in the eggs and reduce the heat. Fry the eggs and put them on the plate.
  • In another pan, pour the olive oil and butter. Put in the chopped garlic, fry it over medium heat for 1 to 2 min and add the cherry tomatoes. Season them with salt and black pepper. Reduce the heat and fry for about 4 to 5 min. Before you take them off the stove add the paprika. Mix them well for one last time and take them off the heat.
  • Pour them over the eggs and sprinkle with feta and parsley.
