These golden Brioche muffins are soft on the inside and flaky on the outside. The taste is amazing and mildly sweet. The ingredients are so simple, they are made ahead of time, and the kneading takes no more than 10 min. These brioche muffins are the perfect for breakfast or for an afternoon snack!

For more flavor, I added some lemon zest. You can also put orange zest. The choice is yours. I also put Turkish delight inside, but the options are endless, you can add chocolate, cocoa with walnuts, raisins, etc.

I sprinkled the top of the muffins with sugar. The options here, instead of sugar, are sesame, walnuts, almonds or almond flakes.

How to make these Golden Sweet Buns? They are so easy to prepare and you don’t need any special technology. If you prepare it at home, your kitchen will smell like a bakery and you will delight your family with warm and delicious buns prepared at home. They are tasty, fragrant and soft. 

Golden Brioche Muffins

Ingredients

  • 2 eggs
  • 1 egg yolk
  • 125 g sugar
  • 1 tsp salt
  • 250 ml milk
  • 8 g yeast
  • 500 g flour
  • 1 tbsp lemon zest
  • 120 g butter, softened
  • 100 g flour, additionally
  • 1 tbsp oil
  • Turkish delight

For spreading

  • 1 egg yolk
  • 1 tsp milk

For sprinkling

  • 2 tbsp sugar

Instructions

  • In a medium bowl, beat the eggs, yolk, sugar and salt. Pour the milk, dry yeast and stir. Cover with a towl and leave for 15-20 minutes.
  • Afterwards, add the flour gradually to the foamy mixture and stir it. Add the lemon zest and start adding a little of the butter, kneading with your hands. With each new piece of butter added you will notice how the dough changes and becomes a little more elastic. After adding the whole amount of butter, take out the dough and start kneading it on a floured surface. The idea here is to knead it until it stops sticking to your hands. Be careful not to add more flour than necessary. I kneaded it for about 8-10 minutes, adding not more than100 g of flour. When it is ready, transfer it to a bowl greased with 1 tbsp oil. Grease the ball of dough with oil, cover with foil and a towel, and let it double in size, which happens for about 2 hours.
  • Once the dough has rested, gently press it to remove the air from the dough and take it out of the bowl. Divide the dough into twelve balls. With a little oil and using only your hands, make long rectangles out of the balls. In these rectangles you will put the stuffing of your choice. I put a few pieces of Turkish delight which I cut lengthwise. Fold the rectangle and cut 3 strips, but not to the end.  Pinch the ends, twist them and start knitting into a braid. Join the two ends and put in prepared muffin wrappers. Cover with foil and a towel and let rise again for about 20 minutes.
  • Once the muffins have risen, spread the yolk over it. That yolk should be previously beaten with a teaspoon of milk. Sprinkle the muffin with sugar to taste. Bake in a preheated oven at 350 F for about 20-25 minutes.
  • After removing it from the oven, cover it with kitchen paper towels and a towel and let it rest for 10-15 minutes. Once it has cooled down, place it on the rack and cover it again.
