  • 65 g sugar
  • 12 g yeast
  • 60 ml vegetable oil
  • 1 egg yolk
  • 2 eggs
  • 1 tsp salt
  • 1 tbsp lemon zest
  • 550 g flour

For spreading

  • 1 egg yolk
  • 1 tbsp milk

Instructions

  • In a large mixing bowl combine all of the ingredients. Combine the dough with a spatula until it comes together and then mix it by hand once it all starts coming together.
  • Put the dough out onto a work surface and knead until smooth, for about 10 minutes. Place the dough in an oiled bowl, cover with plastic wrap and let it rise about 2 hours or until it has doubled in size.
  • Cut the dough into 12 equal pieces. To create the buns, cut each piece of dough in half and roll out each half into a thin rope which is about 40 cm long.
  • Place one rope of dough over the other, creating a cross. Bring the ends of the bottom rope over the top rope crossing them over completely. Repeat this with the horizontal piece of dough and continue crossing the ropes over until you reach the end of the dough. The bun is about 15-18 cm long.
  • Place the bun on a parchment-lined baking tray. Repeat with the remaining buns. Cover the tray with plastic wrap and let the buns rise for about 45 minutes.
  • Preheat the oven to 350° F and brush the buns with an egg and milk mixture. Sprinkle the buns with sugar and bake for 20-25 minutes or until they become golden brown.
