I can assure you that homemade pesto is more delicious than the store-bought one. Tasty, herbal and fresh, the sauce goes very well with fresh tomatoes and pasta.Pesto or pesto alla genovese is a sauce originating in Genoa, the capital city of Liguria, Italy. It traditionally consists of crushed garlic, European pine nuts, coarse salt, basil leaves and hard cheese such as Parmigiano-Reggiano (also known as Parmesan cheese) all blended with olive oil.*

You can use walnuts instead of the pine nuts. It will change the color and taste but it will still be delicious. I like the color of pesto sauce, green like a herb. Today I made it because I will be adding it to my homemade pizza.

Ingredients

  • 1 1/2 to 2 cups fresh basil leaves
  • ⅓ cup pine nuts
  • 2 cloves garlic, minced
  • ½ cup parmesan cheese
  • 6 tbsp (90 ml) extra virgin olive oil
  • ¼ tsp salt

Instructions

  • Place the basil leaves and pine nuts into the bowl of a food processor or a blender and pulse twice. Add the garlic and Parmesan and pulse several more times until it is well mixed.
  • Scrape down the sides of the blender with a rubber spatula. Add the olive oil and pulse again multiple times, occasionally stop to scrape down the sides. Add salt and blend until you obtain a smooth consistency.
