You are going to love this recipe because it is easy and fast. Fall is here and the season of pumpkin has come. I love this vegetable because I can make many recipes with it, salty or sweet. Do you know if the pumpkin is a vegetable or a fruit? I also was confused because it’s a product of the seed-bearing structure of flowering plants but on the other hand, they are edible portions of plants such as leaves, stems, roots, flowers and tubers. Finally the pumpkins are less sweet and more savory from a culinary perspective and that categorizes them as a vegetable.

In my kitchen I use the pumpkin for sweet recipes. On my blog you can find recipes for pumpkin baklava, pumpkin pie, pumpkin muffins and of course how to make homemade pumpkin puree. It’s so easy and there’s nothing better than doing it yourself at home.

Today my recipe has honey and pumpkin. When I was a little girl I loved cookies with honey. They were so delicious. Now I made similar cookies but I added pumpkin. The cookies are fluffy, soft and sweet. I also added walnuts for crunchiness. I made forty cookies. One baked cookie has a 5cm diameter and 3cm high. They are perfect for snacks or for party cookies.

Honey Pumpkin Cookies

Ingredients

  • 2½ cups flour
  • ¼ tsp salt
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • ⅛ tsp cloves
  • ⅛ tsp nutmeg
  • 2 eggs
  • 140 g sugar
  • 90 g honey
  • 100 ml vegetable oil
  • 1 tsp vanilla extract
  • 1 cup pumpkin puree
  • ¼ cup chopped walnuts

Instructions

  • Preheat the oven to 380°F.
  • In a medium bowl sift the flour and add the salt, baking powder, baking soda, cinnamon, cloves and nutmeg. Mix well with a wire whisk. Set aside.
  • In another medium bowl, beat two eggs and the sugar. Make sure to mix well. Add the honey and the vegetable oil. Beat a little and add the pumpkin puree and vanilla extract. Beat again. Finally gradually add the flour mixture. The dough is sticky, we want it that way. Do not add more flour because the cookies will become hard and crumbly.
  • Using two spoons, make small balls. You can also make them with your hands, if you grease them with oil because the dough is sticky and will stick to your hands. Sprinkle the balls with chopped walnuts. I made 40 balls.
  • Bake at 380°F (190°C) for about 10-12 min.
