Today is one of those days when the sun shines bright, the birds sing loudly and the mood in the house is light and happy! It’s the perfect spring day. The sunny day and my great mood motivated me to whip up something in the kitchen. What could be better than light, sweet, quick and delicious cookies?!

These cookies are fresh and very tasty. The time for preparing and baking them is about 30 min. The only thing is that you have to refrigerate the dough for 1 hour.

I made 17 cookies. If you need more you have to double the ingredients and you will have two trays with cookies.

Ingredients

  • 100 g flour
  • 100 g powdered sugar
  • ½ tsp baking powder
  • ¼ tsp salt
  • 1 egg
  • 30 g unsalted butter, melted
  • ½ tsp vanilla extract
  • 3 drops food yellow coloring
  • 1 tsp lemon zest
  • powdered sugar

Instructions

  • In a small bowl, combine together the flour, the powdered sugar, the baking powder and the salt. Set a side.
  • In a medium bowl, whisk the egg with the melted butter and vanilla extract. Add the food coloring to the mixture, stir a little and add in the flour mixture.
  • Mix it well and put in the lemon zest. Cover with plastic wrap and refrigerate for about 1 hour.
  • Preheat the oven to 350°F.
  • Make small balls about 2 cm in diameter. I made a total of 17 balls.
  • Bake them for about 8-10 min.
