Mille-feuille with Fresh Berries

Traditionally, a mille-feuille is made up of three layers of puff pastry, alternating with two layers of pastry cream. The top pastry layer is also layered with cream and chocolate drizzle, and sometimes cocoa, pastry crumbs or sliced almonds.

In my recipe I changed the pastry cream with cheese cream. It’s an easy and fast way to make a delicious dessert. The puff pastry layers are so tasty. I made them sweet and crunchy. The mille-feuilles have fresh berries inside and on the top. It depends on your taste.

I rolled the puff pastry with powdered sugar because I wanted it to be sweet. I cut the pieces and sprinkled them with crushed sliced almonds and powdered sugar to get some more sweetness and that crunchy texture. The cream is so easy to make. Do it while the puff pastry is baking. Put it in the refrigerator to tighten. Make your decoration. It is an easy, tasty and original dessert.

Ingredients

Cream

  • 250 g cream cheese
  • ¼ cup sour cream
  • ¼ cup powdered sugar
  • ½ tsp white vanilla extract
  • 250 ml whipping cream
  • 1 tsp lemon zest

Dough

  • 900 g puff pastry
  • powdered sugar

Garniture

  • 15 g powdered sugar
  • 20 g crushed sliced almonds

Instructions

Cream

  • In a medium bowl combine the cream cheese, sour cream and powdered sugar together. Beat the mixture with a hand mixer and add the vanilla extract. In another bowl, beat the heavy cream. Carefully add it to the cream cheese mixture. After that you can add the lemon zest. Cover the bowl with plastic wrap and put it in the fridge for 1 hour.

Garniture

  • In a small bowl combine the crushed sliced almonds and powdered sugar. Set aside.

Dough

  • Usually my puff pastry is in my freezer and when I want to use it I put it in the refrigerator the night before. Roll the dough on parchment paper sprinkled with powdered sugar. My sheet was 30cm x 30cm.
  • Make rectangles 5cm x 10cm each. I made 18 rectangles. Cover them with the mixture made from the sliced almonds and powdered sugar.
  • Move the rectangles along with the parchment paper onto the baking tray, cover them with another parchment paper and a second baking tray. Preheat the oven to 400°F. Bake for around 30 min, remove the top tray and bake for 10 min more. Bake them according to your preferences. Let them cool completely.
  • Decorate to your taste and sprinkle them with powdered sugar.
