Muffins with Apple, Carrot and Dates

This recipe is very easy and fast. You don’t even need a mixer to make it. You put all ingredients in a bowl, mix them well, fill out the muffin tins and bake. The preparation takes no more than 10 minutes and the baking is about 20-25 minutes.

These muffins are not very sweet on their own. In order to add a little sweetness, I added a sugar frosting . If you don’t like this type of frosting you can increase the amount of brown sugar in the muffin mix.

You can eat them for breakfast or as a snack. They are so delicious. Try them. It really is an easy, fast and tasty recipe.

Ingredients

Muffins

  • 250 g flour
  • ¼ tsp salt
  • 1 tsp baking powder
  • 1 egg
  • 200 g yogurt
  • 110 g brown sugar
  • 50 g unsalted butter, melted
  • 1 apple ( 90 g )
  • 1 carrot ( 65 g )
  • 10-11 dates ( 50 g )

Frosting

  • 150 g powdered sugar
  • 2 tbsp pineapple juice
  • 1½ tbsp unsalted butter melted
  • orange coloring
  • yellow coloring

Topping

  • chopped walnuts

Instructions

Muffins

  • Preheat the oven to 400°F.Peel and cut the apple into small pieces. Peel and grate the carrot. In a medium bowl, sift the flour, add the salt and the baking powder. Stir the mixture.
  • Beat the egg and add it to the flour mixture. Add the yogurt, brown sugar, melted butter, apple pieces and grated carrot. Stir well. Cut the dates into small pieces. Add them to the mixture.
  • Mix it all well and fill the muffin tins. Bake at 400°F for about 20-25 min.

Frosting

  • In a small bowl, pour the powdered sugar and add the pineapple juice and melted butter. Stir well and separate it into two small bowls. Add the coloring to the frosting, one bowl yellow and one bowl orange. Take a muffin and dip the top in the colored frosting.

Topping

  • Sprinkle with chopped walnuts.
