Pesto Pasta with Tomatoes and Mozzarella

Today I will show you an easy and delicious pasta.

Firstly, I want to tell you that I used fettuccine pasta. Have you tried them? They look like tagliatelle but they are not the same. The tagliatelle are slightly wider and thinner than the fettuccine. I love them. But you can make the recipe with your favorite sort of pasta. Boil it to your taste and drain it.

I made them with a basil pesto sauce. I always make it at home. The recipe is here. I made the pesto in advance. If you do too, know that you can store it in the refrigerator.

I also added cherry tomatoes and baby mozzarella. You can cut the mozzarella in small pieces if you like.

And that is all. A quick and easy recipe for a delicious dinner. 

Ingredients

  • 150 g cherry tomatoes
  • 2 garlic cloves, sliced
  • salt
  • black pepper
  • olive oil
  • 450 g pasta
  • 270 ml basil pesto
  • 50 ml boiled pasta water
  • fresh baby mozzarella pearls
  • fresh basil

Instructions

  • Cook pasta in a pot filled with salted boiling water, stirring occasionally.
  • Put the tomatoes, sliced garlic cloves, black pepper and olive oil in a medium saucepan. Fry briefly. Set aside. 
  • Drain the pasta and add the basil pesto.
  • Add about 50 ml of the boiled pasta water. Stir  well. Add the fried tomatoes and baby mozzarella pearls. 
  • Serve immediately and garnish with fresh basil.
