Phyllo Rolls with Feta

Today I present to you one of the most popular recipes in Eastern Europe and especially in Bulgaria, my home country: Phyllo Rolls with Feta.

This is originally my mother’s recipe, however I added my own touch to it. You can easily adapt this recipe to your own taste as long as you keep the basic key ingredients.

There is not one family in Bulgaria that has not eaten this at home and there is not one person there who doesn’t know how to prepare it. But as I said above, there are many ways of making it, and this is the wonderful part of it, because this way the recipe is easily transmitted from one generation to the other all the while being adapted to the changing tastes within the family. 

Everyone adapts it according to their taste, their cooking habits and to the free time they have. If one doesn’t have much time, they will look for a faster and easier option, but if they want something special, they can spend more time, effort and even more products.

My own touch to the recipe is the soft drink, as the basic recipe doesn’t include one. The soft drink adds a unique sweetness to the rolls making them a perfect sweet & salty balance. You can skip the soft drink if you want; after you have rolled up the rolls and put them in the tray, simply brush them with melted butter and bake them. 

Phyllo Rolls with Feta

Ingredients

  • 450 g phyllo dough
  • 300 g feta
  • 3 eggs
  • 120 g butter, melted
  • 80 g butter, melted
  • 2 eggs
  • 250 ml soft drink (7 Up)
  • powdered sugar

Instructions

  • In a small bowl, crumble the feta cheese. In another bowl, beat the eggs and add the crumbled cheese. Stir and set aside.
  • In a small bowl, melt the butter.
  • Cover your work table with foil and spread out the phyllo dough.
  • Brush one sheet with butter and cover with a second one on top. Grease it with butter and put 2 to 3 tablespoons of the egg and cheese mixture. Spread the mixture in a line on the shorter right side of the sheet. Roll it up from right to left.
  • Place the roll on a baking sheet previously prepared with parchment paper. Repeat with the remaining sheets.
  • My sheets were 18, therefore I made 9 rolls which I put in 2 trays.
  • Once the rolls are in the trays, cut them in four to get smaller pieces.
  • Brush them again with the melted butter.
  • In another bowl, beat the two eggs and add the soft drink. Mix lightly and pour the mixture over your phyllo rolls.
  • Shake the trays well so that the liquid can get inside the rolls.
  • Bake in a preheated  oven at 400 F° for about 25-30 minutes or until golden brown.
  • If desired, you can sprinkle your rolls with powdered sugar.
