Pizza with Cauliflower Crust

Easy to make, grain-free and so healthy. This is cauliflower pizza. For those who love pizza and healthy eating, this is their recipe.

I’ll tell you a little trick with this pizza. You must drain the cooked cauliflower, as it keeps the crust dry and crisping while it bakes. Do it and you will be pleasantly surprised.

Ingredients

Crust

  • 1 large head cauliflower, chopped
  • 1 large egg
  • 1 cup shredded mozzarella
  • ¼ cup grated Parmesan
  • 2 cloves garlic, minced
  • salt
  • black pepper, ground

Toppings

  • ¼ cup tomato sauce
  • salt
  • parsley
  • 1 cup shredded mozzarella
  • 2 tomatoes
  • 1 red pepper
  • olives
  • basil
  • ¼ cup grated Parmesan

Instructions

Crust

  • Preheat oven to 425°F.
  • In a large skillet, bring water to a boil and season with salt. Boil the cauliflower for 3 to 4 minutes.
  • Transfer to a clean dish towel or paper towels and squeeze to drain the water. Add drained cauliflower to food processor and pulse until grated. Transfer grated cauliflower to a large bowl and add 1 egg, 1 cup mozzarella and 1/4 cup Parmesan, then season with salt and black pepper.
  • Transfer dough to a baking sheet lined with parchment paper and shape into a circle.
  • Bake until golden and dried out, about 20 minutes.

Toppings

  • Top crust with tomatoes sauce with salt and parsley, sprinkle mozzarella, tomatoes, red pepper, olives, basil and parmesan.
  • Bake until the cheese is melted and the crust is crisp, about 10 minutes.
