Pumpkin season is one of my favorite ones. You can do so many things with pumpkins such as pies, lattes, cheesecakes, muffins, cookies, macaroons and pumpkin breads. I have a few recipes with this tasty product; you can click on any of the desserts listed previously and they will lead you to their recipes 😉 .

This fall season, I am offering you something easy to make and so delicious. This pumpkin bread is perfect for this time of the year. In fact, you can eat it as breakfast with your morning coffee or as a quick and easy to eat snack or even as a dessert which you can serve to your friends with a scoop of ice cream. You can go no wrong with this sweet and soft bread. This is also a very good way to save money! Instead of buying the Starbucks pumpkin bread which can be quite pricey, you can make your own and save not only money but time as well, especially in the morning on your way to work!

Honey Pumpkin Cookies

Today my recipe has honey and pumpkin. When I was a little girl I loved cookies with honey. They were so delicious. Now I made similar cookies but I added pumpkin. The cookies are fluffy, soft and sweet. I also added walnuts for crunchiness. I made forty cookies. One baked cookie has a 5cm diameter and 3cm high. They are perfect for snacks or for party cookies.

Pumpkin Bread

Ingredients  

  • 1½ cups flour
  • ½ cup sugar
  • ½ tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • ⅛ tsp ground cloves
  • ⅛ tsp ground nutmeg
  • ⅛ tsp cinnamon
  • ¼ cup chocolate chips
  • ¼ cup walnuts, chopped
  • eggs
  • ½ cup sugar
  • 1½ cup pumpkin puree
  • 120 ml vegetable oil
  • 60 ml milk
  • ½ cup brown sugar

Instructions 

  • Firastly, preheat the oven to 350°F and set an oven rack in the middle position.
  • Generously grease the loaf pan  (8 x 4-inch) with butter and put in the parchment paper. Set aside.
  • In a large bowl, sift the flour and add the baking soda, baking powder, salt, ground cloves, cinnamon, as well as the ground nutmeg. Stir until well combined. Add the chocolate chips and walnuts, stir again and set aside.
  • In a medium bowl, beat the eggs and the sugar. Continue beating until the mixture becomes very light and fluffy, which takes a few minutes. Add the pumpkin puree, vegetable oil, milk and brown sugar and mix.
  • Add the egg mixture to the flour one and mix on low speed until well combined and homogenous.
  • Pour the batter into the prepared pan and bake for 55 to 60 min or until the cake tester (or tooth pick) inserted into the center comes out clean.
  • Let the loaf cool in the pan for about 10 minutes, then take it out and turn it over onto a wire rack to cool completely.
  • Fresh out of the oven, the loaf has a deliciously crisp crust. If there is some leftover the day after you baked them, you can toast individual slices to get the same fresh-baked effect.
