These chocolate muffins are very easy and delicious. The combination of cocoa and coffee is amazing. I used Nescafé flavored with French vanilla, which gave an amazing scent to the muffins.

They are garnished with the wonderful ganache of cream cheese and butter, which refreshes and balances the taste. The decorations are in the Christmas spirit – chocolate snowflakes perched on blue clouds that bring great joy to children and chocolate Christmas trees with a crunchy finish.

Ingredients

Muffins

  • 1 cup flour
  • ½ cup cocoa powder
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 1 cup sugar
  • ½ cup milk
  • ¼ cup vegetable oil
  • 1 large egg
  • ½ tsp vanilla extract
  • ½ cup boiling water
  • 2 tbsp instant coffee

Cream Cheese Frosting

  • 250 g cream cheese
  • 120 g unsalted butter, softened
  • 2 cups powdered sugar
  • blue icing color

Instructions

Muffins

  • Preheat oven at 325°F.
  • Add flour, sugar, cocoa, baking powder, baking soda and salt to a large bowl and stir the flour mixture until combined well.
  • In a small bowl, beat the egg. Then add milk, vegetable oil and vanilla extract and mix together.
  • Add this mixture to the flour mixture and mix together.

  • In the boiling water add the instant coffee and carefully add the coffee the muffin batter.
  • Place muffin liners in the muffin tin and evenly distribute the batter.
  • Bake the muffins until a toothpick inserted in the center comes out clean, about 20 minutes.

Prepare the buttercream frosting

  • With a handheld mixer beat the cream cheese and butter together until smooth. Add the powdered sugar and mix until fully combined. Leave in the refrigerator for 15-20 minutes.
  • Frost the cooled muffins as desired.
  • Decorate.
