These are littles brioche buns that look like little pretzels. They are so soft and so sweet! The brioche buns melt in your mouth. They are great for breakfast, for a snack at work or for lunch for your kids at school.

The interesting thing about them is that when eaten on the same day, they remain slightly crunchy. The dough tastes like butter and melts in your mouth.

Can you imagine that there is only one egg white in them?!

Another important thing I want to tell you is that we do not knead the dough like other brioche. Isn’t it great! You simply have to let it rest for 1 hour and then 2 more times for about 10 minutes each and that’s it! The recipe is simple, with a few ingredients and is super easy to execute.

The recipe has 3 stages.

Firstly, you mix together the warm milk and water, sugar, salt and yeast. Cover that with a towel and let it sit for 10 min.

Second of all, you prepare the dough.
Pour the flour over the liquid ingredients and egg white and stir with a wooden spoon until it starts to come together and knead with your hands until you get a ball that does not stick to your hands. Cover it with a towel and let it rise for 1 hour.

Finally, you shape them and bake.

I have two other brioche recipes here on my site that are equally as delicious and easy to make. You can check them out here.

  • 1 tbsp yeast
  • 100 ml oil
  • 50 g sugar
  • orange zest
  • 1 egg white
  • 400 g flour
  • 50 g butter room temperature
  • 1 egg yolk
  • sugar

Instructions

  • In a medium bowl, pour the warm milk, warm water, sugar, salt and yeast and stir it all together. Cover with a towel and let rest for 10 minutes.
  • Afterwards, add the oil, sugar and orange zest to the mixture. Stir then add the egg white and flour.
  • Mix well with a wooden spoon until it all comes together and then knead it by hand until it forms a non-sticky ball. Cover the ball with plastic wrap and let it rise for about 1 hour.
  • Once the dough has risen, gently press it to remove any air bubbles from it and take it out of the bowl.
  • Lightly oil your work surface and stretch the dough with your fingers until it forms a large  rectangle. Be careful not to make any holes in the dough.
  •  Brush the rectangle with a little more than half the butter. Then fold ⅓ of the rectangle on the longer side. Brush the top of the folded  part with butter and fold the other ⅓ left of the dough over it. You should now have a thin rectangle.
  • Brush the rest of the butter over half of your rectangle. Then fold it in half from left to right.
  • Stretch the dough once again with your fingers, cover it with plastic wrap and a towel and let it sit for about 10 minutes.
  • Cut the short side of the rectangle into 8 strips.
  • Then take one strip and twist the ends in different directions. Then join the ends together to form a circle. Leave the circle on a previously prepared tray with baking paper. You can see the whole folding, cutting and twisting process in my video right here.
  • Repeat this with the other strips. Cover the circles with plastic wrap and a towel and let them sit for about 10-15 minutes.
  • Preheat the oven at 360°F.
  • Brush the circles with the egg yolk and sprinkle them generously with sugar.
  • Bake in a preheated oven at 360F for about 20-25 minutes.
