An incredible quiche, with a slightly crispy crust and full of aromas. The pear gives sweetness and light crunchiness, which combined with the taste of blue cheese is amazing.

In my recipe, I use only blue cheese, as a stronger flavor and I emphasize the cream cheese, which gives a softness to the curd. But I advise you to use your favorite cheeses. I am sure you will be very pleased with the result.

Especially now that the weather outside is cool and gloomy, settling comfortably at home with a glass of wine and this quiche is a great way to spend the evening.

Three Cheese Quiche with Pears

Ingredients

Crust

  • 220 g flour
  • 115 g unsalted butter, chilled, cut into small cubes
  • ¼ tsp salt
  • 1 egg yolk
  • 60 ml cold water

Filling

  • 150 ml cooking cream
  • ½ tsp salt
  • 1 egg
  • 2 pears
  • 100 g cream cheese
  • 100 g blue cheese
  • 4 creamy cheese wedges ( The Laughing Cow)

Instructions

Prepare the Crust

  • In a medium bowl, whisk the flour with the salt, butter and egg yolk using a pastry blender, a fork or a pastry processor until crumbs are formed. Add water and mix just until dough comes together. Wrap it with plastic and refrigerate for at least 30 minutes.
  • Preheat the oven at 360°F.
  • On parchment paper roll the pastry with the 2 cm more that diameter as your baking dish. Place it in the pan and pick the tom with a fork.

Prepare the liquid filling.

  • In a small bowl pour the cooking cream, egg and salt. Stir and set aside.

Assembly

  • Clean and cut the pears into 6 pieces each.
  • Arrange the pear slices in the pan. Cover with the cheeses.
  • Pour the liquid mixture and bake at 360°F for about 20-25 minutes .
