Vegan Orange Madeleines

I love these madeleines. They are so delicious. The idea for these came from my older daughter. She likes vegan recipes and she loves trying new things, so I made them for her party at home with her friends.

These madeleines are so easy to make. They are simple and elegant, and they are great for a party! 🙂

They are moist, fluffy, crispy on the outside and tender on the inside. Try them, they are delicious.

Ingredients

  • 1 cup almond flour
  • ⅓ cup flour
  • 4 tbsp cornstarch
  • 1½ tsp baking powder
  • ¼ cup brown sugar
  • ¼ tsp sea salt
  • 1 tsp grated orange zest
  • ½ cup almond milk
  • 3 tbsp melted coconut oil
  • 30 ml orange juice
  • ½ tsp orange extract
  • ½ tsp orange colouring

Instructions

  • Preheat the oven to 360 degrees Fahrenheit ( 180 degrees Celsius ).
  • In a large mixing bowl combine the almond flour, the all purpose flour, the cornstarch, the salt and the orange zest.
  • Place the almond milk in a bowl and add the melted coconut oil, the orange juice, the orange extract and the colouring. Mix well.
  • Add the liquid ingredients to the dry mixture and gently stir until combined fully. Refrigerate at least 20 minutes until the batter has thicken.
  • Lightly coat your madeleine pan with coconut oil and transfer the batter.
  • Bake in the oven for around 12-15 minutes until golden brown.
  • Once out the oven, remove them from the tin and transfer onto a wire rack to cool.
