Zucchini Cream Cheese Phyllo Cups

Looking for an easy and delicious appetizer!!! Try these phyllo cups! They are crispy, flaky phyllo cups filled with cream cheese, fried zucchini, green and red peppers and sprinkled with fresh parsley.

Your family will love it. They are elegants and delicious. Great for a glass of red wine with a pleasant conversation. You can make them for your guests when you have a party at home.

Ingredients

  • 12 phyllo cups
  • 1 tbsp olive oil
  • ¼ onion
  • 1 zucchini
  • ½ red pepper
  • ½ green pepper
  • 250 g cream cheese

Instructions

  • Put the olive oil and finely chopped onion in a pan. Fry briefly over medium heat and add the green and red chopped peppers and zucchini. Fry for 5 minutes and remove from the heat. Set aside to cool.
  • In a bowl, put the cream cheese and add the cooled fried vegetables. Mix well, try it to taste and season with salt if necessary. Fill the cooled phyllo cups with the filling using a spoon. Sprinkle with chopped parsley.
